Idli Chilly

Ingredients:

Idlies 8
Capsicum 1/2 cup
Cabbage 1/2 cup
Chopped ginger 1 tbsp
Chilly sauce 2 tsp
Soya sauce 1 tsp
Tomato sauce 1 tbsp
Corn flour 1 tsp
Oil 1 tsp
Ajinomoto 1/4 tsp

 

How to make Idli Chilly

Cut idlies into thick slices.

Chop capsicum and cabbage into thin slices.

In a pan heat oil and add chopped ginger.

Then add capsicum and cabbage slices.

Fry for 1 min then add chilly sauce,soya sauce,tomato sauce and ajinomoto.

Make cornflour paste in a bowl with little water.

Add cornflour paste in it.

Now add idli pieces.mix well.

Idli chilly is ready.

Upit

Ingredients:

Rava 1 cup
Onion 2
Green chilly 2
Kaju 4-5
Kadipatta 4-5
Urad dal 1 tsp
Mustard seeds 1/2 tsp
Turmeric powder 1/4 tsp
Milk 1/2 cup
Water 1/2 cup
Grated coconut 1/2 cup
Oil 2 tbsp
Coriander leaves 1 tbsp
Salt

 

How to make Upit:

Boil the mixture of water and milk.

Cut the onion and green chilly.

In a pan heat 1 tbsp oil and fry rawa for 4-5 min on the low flame.

Remove from the pan.

In the same pan again heat 1 tbsp oil add urad dal.when it turn brown add mustard seeds,kadipatta,green chilly and onion.

Then add rawa and mix well.pour boil water milk mixture.

Add kaju,turmeric powder and salt.

Cover the pan for some time.

Upit is ready. garnish with coconut and coriander leaves.

Aaloo Posto

Ingredients:

Potato 4
Onion 4
Sponge gourd 1/4 kg
Drumstick 4
Khus khus 50 gm
Red chilly powder 1 tsp
Turmeric powder 1/2 tsp
Red chilly 2
Jeera 1 tsp
Oil 2 tbsp
Salt

 

How to make Aaloo Posto:

Soak khuskhus in water for 15 min and make fine paste in mixture.

Cut onion in thin and potato in thick slices.

Make pieces of drumstick and cut gourd in round.

In a kadai heat oil and fry potato for 2-3 min. and remove from the kadai.

In the same kadai with little oil add jeera and red chilly.

Then add onion slices and saute it till brown.

Now add pieces of drumstick and gourd.

Mix well and cover the pan.allow to cook.

After some time add fried potato along with khuskhus paste,red chilly powder,turmeric powder and salt.

Mix finely add water and cover the pan.and again allow to cook for some time.

Pomfret Fish Curry

Ingredients:

Pomfret fish pieces 6-8
Coconut 1/2
Onion 1
Red kashmiri mirchi 4
Coriander seeds 1 tsp
Methi seeds 6-8
Peppercorns 4
Turmeric powder 1/2 tsp
Tirphal (optional) 4
Kokum 4
Oil 2 tsp
Salt

 

How to make Pomfret Fish Curry:

First clean the fish, apply salt and keep aside for 30 min.

Grate coconut and add 1/2 onion,red mirchi,coriander seeds,methi seeds, pepper corns,tirphal(optional) and turmeric powder and grind fine paste in a mixture with little water.

After 30 min wash fish cleanly.

In a pan heat oil and add finely chopped onion saute it till brown.

Now pour the grind masala and stir continuously.

Add salt and kokum in above mixture

Allow to boil then add fish pieces.

Keep on low flame for 2-3 min.

Pomfret fish curry is ready.

Serve with hot rice and enjoy.

Dal Fry

Ingredients:

Tur dal 1 cup
Tomato 1
Onion 1
Mustared seeds 1 tsp
Jeera 1 tsp
Jeera powder 1 tsp
Ginger 1 inch
Garlic cloves 4-5
Red chilly powder 1 tsp
Red chilly 2
Haldi 1/4 tsp
Kadipatta leaves 4-5
Coriander leaves 2 tsp
Oil 1 tbsp
Salt

 

How to make Dal Fry:

Wash tur dal and soak in water for 30 min. and cook in a pressure cooker.

Cut tomato,onion,ginger and garlic into fine pieces.

In a pan heat oil and add mustard seeds,jeera and kadipatta.

Then add red chilly and ginger garlic pieces.

Add onion and fry till golden brown.

Now add tomato pieces and fry again.

When tomato mash finely add jeera powder,haldi powder,red chilly powder and salt.

Fry for 2-3 min on low flame.

Then add boiled dal and mix well.

Allow to boil.

Dal fry is ready.

Garnish with chopped coriander leaves.

Fried rice

Ingredients:

Basmati rice 2 cups
Carrot chopped 1 cup
Cauliflower 1 cup
Long beans 1 cup
Cabbage chopped 1 cup
Capsicum chopped 1 cup
Green peas 1 cup
Spring onion 1 bunch
Soya sauce 1 tbsp
Vinegar 2 tsp
Tomato sauce 1 tsp
Ginger chopped 1 tbsp
Green chilly 10
Oil 1 tbsp
Salt

 

How to make Fried rice:

Wash rice and soak in a water for 30 min.

Cook rice half and drain out water and keep aside.

Cut all vegetables and boil.

In a pan heat oil and add chopped green chilly pieces and ginger pieces.

Add boiled vegetables and fry for 2-3 min.

Then add rice and mix well.

Now add soya sauce,vinegar,tomato sauce and salt.

Mix well and garnish with chopped spring onions.

Godi Dal

Ingredients:

Tur dal 1 cup
Grated coconut 1 cup
Cumin seeds 1 tsp
Turmeric powder 1/2 tsp
Asafoetida 1/4 tsp
Ghee 1 tsp
Sugar 1/2 tsp
Salt

 

How to make Godi Dal:

Cook tur dal in pressure cooker.

Grind coconut and cumin seeds in mixture with little water.

In a pan mix all ingredients and allow to boil.

While serving you may add lemon juice.

Enjoy with hot rice.

Kande Pohe

Ingredients:

Jada poha 2 cups
Onion 4
Green chilly 2
Grated coconut 1/2 cup
Coriander leaves 1 tbsp
Turmeric powder 1/2 tsp
Mustard seeds 1/2 tsp
Cumin seeds 1/2 tsp
Kadipatta 1 string
Sugar 2 tsp
Oil 1 tbsp
Salt

 

How to make Kande Pohe:

First clean poha, wash, drain and keep aside.

Cut onions,green chilly and coriander leaves.

In a pan heat oil and add mustard seeds,cumin seeds,green chilly and kadipatta.

Then add onions and saute it till brown.

Add turmeric powder and salt.

Now add poha and mix well.

Lastly add sugar,grated coconut and coriander leaves.

Cover the pan and allow to cook on low flame for 2-3 min.
