Uthappam

Ingredients:

Long grain rice            5 cups
Urad dal whole           1 cup
Chopped onion                2
Chopped green chilies  4
Chopped tomato             1
Coriander leaves        2 tbsp
Salt
Oil

How to make uthappam:

Soak the long grain rice for 8 hrs.
Soak urad dal for 2 hours.
Grind the  rice and urad dal.
Add salt and let it ferment at least for 8-10 hours.
Heat a griddle and pour 2 cups batter.
Sprinkle chopped onion, chili and tomato.
Apply little oil around the edges.
Then  turn to the other side and cook with oil again.
Uthappam is ready serve with green chutney or sambar.

Nimbu ka meetha aachar

Ingredients:

Lemons                 1 Kg
Salt                         150gm
Jaggery crushed  400 gm
Cumin seeds       3 tsp
Fennel seeds      25 gm
Methi seeds         25 gm
Pepper corns       25 gm
How to make nimbu ka meetha aachar:

Wash lemons cleanly.
Dry the lemons with a clean muslin cloth.
Cut the lemons into 4 pieces.
Apply salt and keep them in a jar.
Place the jar in the sun for 4-5 days.
Dry roast the whole masalas together.
Grind them coarsely.
Add the freshly ground masalas & crushed jaggery to the lemons.
Keep the jar of lemons in the sun again for 4 days.
Open the jar and mix the aachar finely.
Again Keep the jar of lemons in the sun for 1-2 days.
Nimbu ka meetha aachar is ready.

Apple Pudding

Ingredients:

Apples                             5
Sugar                         1/2 cup
Cinnamon powder  1/2 teaspoon
Skim milk                  1&1/2 cups
Butter                         1 teaspoon
Salt
How to make apple pudding:

 Cut apples into slices.
 Mix  sugar, cinnamon powder and salt.
 Place half the apples in a nonstick baking dish and sprinkle with half the sugar mixture.
 Spread the butter.
 Arrange another series of layers. Then add milk.
 Cover and bake 350F for 50 minutes.
 Remove the cover and again bake 10 minutes more.
 Apple pudding is ready.

Coconut biscuits

Ingredients:

Maida                      150 gm
Butter                      100 gm
Coconut powder    50 gm
Sugar powder        50 gm
Vanila essence     1 tsp        
Baking powder      1/2 tsp
Milk
How to make coconut biscuits:

Beat butter and sugar then add all ingredients one by one.
Mix well and knead dough with the help of little milk.
Roll out thick chapati and then cut biscuits with the biscuit cutter.
Bake in oven for 15 to 20 min.

Dudhi ki sabji

Ingredients:

Small dudhi               1
Tur dal                      1 tbsp
Peanuts                   1 tbsp
Red chillies                2
Turmeric powder   1/2 tsp
Sesame seeds      4 tsp
Coriander seeds   1 tsp
Fennel seeds         1 tsp
Garlic  cloves           5-6
Asafoetida
Coriander leaves
Salt
 
Masala:

First fry tur dal in a kadai till golden without oil.
Then fry peanuts. keep aside.
Lastly fry red chillies,sesame seeds,coriander seeds,fennel seeds and garlic cloves.
Allow to cool.
Then add turmeric powder and asafoetida.
Make a powder in a mixer and keep aside.
How to make dudhi ki sabji:

Cut dudhi in a cubes.
In a pan boil 1 cup of water.
Add dudhi cubes and salt.
Allow to cook for 5 min.
Add masala and again cook for 2-3 min on low flame.
Add a little  water if necessary.
Dudhi ki sabji is ready.
Garnish with coriander leaves.

Egg sandwich

Ingredients:


Slice bread            4
Boiled eggs           2
Tomato                  1
Onion                     1
Cheese slices      2
Pepper powder  1 tsp
Butter
Salt

How to make egg sandwich:

 In a bowl take chopped boiled eggs and add finely chopped onion and tomato,pepper powder and salt.
 Mix well.
 Apply butter on bread slices.
 Spread egg mixture on the bread.
 Place the cheese slice over it.cover the sandwich with another slice.
 And place it in the sandwich toster till the bread is golden.
 Serve with tomato ketchup.

Mutton Cutlet

Ingredients:

 Mutton kheema                   1/2 kg
 Onions                                     2
 Green Peas                          1 cup
 Potatoes                                1 cup
 Green Chillies                        5
 Red Chilli Powder               2 tsp
 Ginger and Garlic Paste    2 tbsp
 Garam Masala Powder     1 tbsp
 Cumin  Powder                  1 tbsp
 Pepper Powder                  1 tbsp
 Turmeric powder                1/2 tsp
 Bread crumbs                     1 cup
 Lime Juice
 Egg                                           1
 Oil
 Salt

How to make mutton cutlet:

 Wash kheema and pressure Cook without water,by adding half portion of chopped onion, ginger garlic paste and garam masala powder.
 In a pan heat 1 cup of oil and add another half portion of ginger garlic paste,onion and green chilly.
 Fry for a minute and then add the cooked kheema,boiled potatoes green peas,red chilli powder,turmeric powder, garam masala powder,,pepper powder,cumin powder,lime juice and salt.
 Cook on low flame for about 20 min or till all water is completely dried up and becomes a lump.
 Allow to cool and Shape into balls and flatten with hands.
 In a big bowl  beat the egg well.
 Dip the cutlets in the beaten egg and then the bread crumbs.
 Shallow fry in oil till golden.
 Mutton cutlet is ready.

Shrikhand

Ingredients:

Thick curd                     500 gm
powdered Sugar         250 gm
Saffron                          5-6 sticks
Badam                           4-5
Pistachios                     4-5
Cardamom powder   2 tsp

How to make shrikhand:

 Pour fresh curd into a clean muslin cloth. tie and hang for 2 - 3 hours.
 Beat till sugar mixed.
 Add saffron,chopped badam ,pista and cardamom powder.
 Mix well.

Moong dal usal

Ingredients:

moong dal              2  cups
mustard seeds     1 tsp
green chillies            4
ginger                         1″
grated coconut       1/2 cup
asafoetida               1/4 tsp
Kadipatta leaves      4-5
Coriander leaves   1 tbsp
sugar
salt
oil

How to make moong dal usal:

 Heat the oil in a pan.Add mustard seeds.
 When the mustard seeds splutter Add the chopped ginger & green chilly.
 Fry on  low flame for about 2  minutes.
 Now add asafoetida powder and the kadipatta.
 Wash moong dal and add in a pan.
 Add hot water,sugar and salt.
 Allow to a boil,cover and simmer for about 5-6 min.
 Add water if necessary.
 When the grams are cooked add the grated coconut and chopped coriander leaves.
 Moong dal usal is ready.

Gulabjam

Ingredients:

Milk powder                    2 cups
Maida                              1 tbsp
Sugar                              2 cups
Soda bi carb                  1/2 tsp
Elaichi powder              1 tsp
Lemon juice                   1 tsp
Rose essence
Ghee or dalda
How to make gulabjam:

 Take sugar in a pan and add 2 cups of water and cook to make syrup.
 Allow to boil and keep on low flame for 5 min.
 Add lemon juice and rose essence.
 In a big bowl take milk powder,maida,soda ,elaichi powder and 6 tsp melted ghee and mix finely.
 Add little milk if necessary. and knead soft dough lightly.
 Make small balls and fry in kadai till dark brown on low flame.
 Add to the hot syrup.
 Gulabjam is ready.
