Matki Chi Usal

Ingredients:

Matki 2 cups
Onion 1
Red chilly powder 1 tsp
Turmeric powder 1/4 tsp
Grated coconut 2 tbsp
Garlic cloves 4-5
Green coriander leaves 1 tbsp
Garam masala powder 1/2 tsp
Sugar 1 tsp
Oil
Salt

 

How to make Matki Chi Usal:

Soak the matki in water for 8 hrs.

Drain and boil with a cup of water, little turmeric powder and salt.

Chop onion and green coriander leaves finely.

In a pan heat oil and add crushed garlic cloves.

Fry garlic cloves till light golden.

Now add chopped onion.

Fry onion till translucent.

Add chilly powder and turmeric powder.

Mix finely on low flame.

Now add boiled matki, garam masala powder and salt.

Mix well and cook for 5 min.

Add little water if necessary.

Lastly add grated coconut,chopped coriander leaves and salt.

Mix and cook another two minutes.

Matki usal is ready.

Serve with roti.

Palak Thepla

Ingredients:

Palak leaves 15-20
Wheat flour 2 cups
Red chilly powder 1 tsp
Turmeric powder 1/2 tsp
Ginger garlic paste 2 tsp
Green chilly 2-3
Oil 2 tsp
Salt

 

How to make Palak Thepla:

Wash palak leaves finely.

Boil palak leaves with little salt. Allow it to cool and drain.

Make a paste in a mixer.

Chop green chillies finely.

Mix wheat flour, red chilly powder, turmeric powder, ginger garlic paste, chopped green chillies, oil and salt in a palak paste.

Knead a dough.

Keep aside for 10 min.

Now make small balls and roll out them into thin Theplas.

Heat a non stick pan. Cook till golden on both sides with oil.

Serve hot with any pickle.
